BTBS: Brinjal Taste-Test | Brinjal Seed-Save is a pop-up food cart that celebrates the agricultural biodiversity of brinjal (aubergine / eggplant) in India.
Visitors to the food cart can try a different brinjal dish each day, learn to save brinjal seeds, and exchange brinjal dish recipes and stories. The cart displays different varieties of brinjal, each with a different flavour, texture and collection of recipes. Recipes are technological ecosystems, connecting certain ingredients and methods of preparation to certain flavours and varieties of plants. The BTBS cart celebrates the diversity of this versatile fruit which is such an integral part of Indian cuisine.
