Extreme Salad Man is a film about a plant-collector and his wild garden North of the arctic circle.
Stephen Barstow has a life project to save and grow perennial plants so that can eat a vegetarian and biodiverse diet year round in one of the most challenging climates on Earth. Shot over 2 years near Trondheim, Norway the film explores taste, place and change and celebrates the joy in growing and eating recipes that contain more than 200 ingredients.
The film was supported by and shown at The National Museum of Norway as part of the New Nordic: Cuisine, Aesthetics and Place exhibition in 2025. A version of the exhibition will be on display at the National Nordic Museum in Seattle, USA from 15 November 2025.
