Beta-Tasters: New National Dish<\/strong> is a performance\u00a0that collects trends, forecasts and data to prototype a new\u00a0national dish for a given region. Visitors contribute their preferences by selecting three attributes\u00a0to be processed and translated\u00a0into tasters by our\u00a0computer.<\/p>\n Changes to the human food system are being driven by factors such as climate change, demographic trends, migratory patterns, technological disruptions and cultural innovations. Although a relatively recent phenomenon, national<\/span> dishes<\/span> are under pressure to accommodate these changes while still remaining relevant to citizens.\u00a0<\/p>\n What constitutes a national<\/span> dish<\/span> anyway? Or a country for that matter? If climate change means that a key ingredient to a national<\/span> dish<\/span> can no longer be grown within a country\u2019s borders, is it time for an update?<\/p>\n
